The Linda Kearns Cake
The Linda Kearns Story...begins in 1998.
Linda Kearns, originally from West Yorkshire, was experiencing the many unwelcome problems associated with the menopause. Ladies of a certain age know exactly what these are...and how debilitating they may become.
Finding that prescribed HRT did not agree with her, Linda looked for a more natural alternative.
Linda found that established research suggested that a diet rich in natural phyto-oestrogens from foods such as soya and linseed was the answer.
She noted that the oriental diet is naturally high in phyto-oestrogens.
The Japanese have no words for "hot flushes"...the ladies don't have them..so no need for words....
Some of the natural seed and grains that are rich in phyto-oestrogens on their own may be unappetising.
By creating a tasty cake with the right wholesome ingredients, and eating only a generous slice a day, Linda's problems were quickly alleviated.
Successful testing on her friends meant that the word soon spread.
The recipe was published in the national press so that anyone could bake it.
Busy life-styles and non-availability of some of the ingredients and limited technical skills for home baking did create problems.
Janet Woodward also saw the coverage in the national press....and approached John Foster of Fosters Bakery....saying this is what Ladies need....and...the rest is history.
Wellfoods began dispatching in April 1999 to destinations in the UK, Europe, Middle and Far East.

The Linda Kearns Cake now has two varieties of cake..the original raisin made with wheat flour...and the Cranberry.
Although the Cranberry...is wheat free...it is NOT Gluten free.
(We did try making a fully gluten free version...especially for the Coeliac ladies....and it just wasn't as successful as we expected.).
Why has the recipe changed??
The parent company of Wellfoods, Fosters Bakery, is moving towards being a site that does not handle nuts.
What about others with dietary requirements??
The Linda Kearns cake has always been suitable for our Vegetarian and Vegan friends..and its lactose free.
Try the cake..(either of them) spread with butter (or spread of your choice)...or the cranberry is rather tasty with your favourite spread cheese...(Philadelphia....the light is good.....but the newer "flavours." the garlic etc....no....)
Yogurt is good too. Its good for elevenses...or with a piece of fruit for lunch...or on the sofa with your feet up and a magazine...

How much do I need to eat??
The Linda Kearns cake is baked in 300gm cake...making storage easy. Its packed ready for the freezer.
All you need to do..is literally cut the cake into 3...making portions for 3 days. Enjoy at your leisure...the 100 gms of cake. It does look generous...but you don't have to eat it all at once.
